The Cowboy's "Steak Wrapped Brat"

2 cups (Quality)Sherry

1 white onion

1 cup brown sugar

1 tablespoon black pepper

2 tablespoons olive oil

1 package Beer Brat-4-5 brats

1 package quality Sourdough Buns

1 cup barbeque sauce

Soak Brats in sherry, brown sugar, barbeque sauce and onion mix over night.

Saute Brats in 1 cup sauce on low for 10 minutes

Saute 5 thin layer cut steaks or 5 thin cut roast with olive oil and pepper. 

Dip steaks in remaining sherry mix and sear on one side. 

 Roll brat onto cooked side of steak.

 Pin with toothpick and cook until done. Serve with bun and split pickle and choice of chips and a Mi Mosa or iced cold beer.

 

The Cowboys "Chicken N sausage".

 Ya'all know the drill. Season at least 1 hour at room temperature before grilling.

The Cowboys "Italian Bell N Rose Pepper Chicken".

Yes, Rosemary of course. But there are real (edible) roses under those bell peppers soaked in Lemon juice for three days. Lots of Dried Italian seasoning . You can bake or grill this one.

 

The Cowboys "Sweet Potato Pie"

 Pie Crust

1 ½ cups flour

½ stick low sodium white butter

1/3 cup oil

½ teaspoon salt

2 tablespoons milk

Preheat oven to 400. Combine ingredients stir until fairly moist.

Press into pie pan. Brush on butter. Bake for 5 to 8 minutes.

 

Filling

 2 cups cooked sweet potatoes

1 cup brown sugar

3 eggs

1 ½ teaspoon cinnamon

1 teaspoon nutmeg

½ teaspoon salt

1 ½ tablespoon vanilla

2 tablespoon rum

1 ½ tablespoon flour

1 ½ cup of light cream

4 tablespoons melted butter

1/2 cup pecans and walnuts

Lower heat down to 350.

Combine sweet potatoes and sugar.

Beat in eggs, and milk and all other ingredients except nuts.

Pour into pie shell and bake for 45 minutes. Remove from oven and let slightly cool. About five minutes away from oven.

 

Struesel topping

1 cup confectioners sugar

1 tablespoon vanilla

3 tablespoons unsalted butter, melted

4 tablespoons whipping cream

Arrange nuts on pie

Combine sugar, butter and vanilla in small bowl and whip to creamy consistency. Add in whipping cream. Struedel over pie and continue to let cool. * The overall appearance is a Struedel or Struesel look. Do not cover entire pie. Small lines wiggled onto pie. If too thick to spred in this fashion add a tablespoon of milk or cooking cream or lemon juice.

 

The Cowboys "Quiche"

1/2 lb. Bacon, browned and drained

3 Tbsp. cooking oil

1/2 cup chopped onion

1 1/2 cups Spinach

1 cup grated shredded Swiss cheese

1 cup cheddar cheese

1 c. biscuit mix

1 3/4 c. milk

6 eggs

1 tsp. salt

1tsp. pepper

1 Tbsp. parsley flakes

1/2 Tbsp Sage

1 Teasp Thyme

Combine cooking oil and press into (2) 9 inch pie pans. Preheat oven to  425 degrees.

Layer bacon, spinach and cheese.

In a small bowl combine milk, eggs, onion, oil, biscuit mix, salt and pepper, sage, thyme and mix well.

Pour over Bacon, spinach and cheese. Sprinkle with parsley flakes.

Place in oven and bake 30 minutes. Cool 5 minutes before serving.

 

The Cowboys "Barbecue Sauce"

1 med. onion, chopped

2 Tbsp. butter

2 Tbsp. vinegar

1 Tbsp. lemon juice

1/4 c orange juice

1/2 c. brown sugar

2 Tbsp. mustard

1/4 c. water

3 Tbsp. Worcestershire sauce

1 green pepper, chopped

1/4 c. wine vinegar

Sprinkle of garlic powder

Sprinkle of celery salt

Salt and pepper to taste

Saute onion in butter. Add all remaining ingredients and simmer at

least 15-20 minutes. Great for marinate, too.

 

 The Cowboys "Holiday Steak Um's" 

3 1/2" Rib Eye Steaks

1 large skinned cucumber

1 onion sliced

2 cups or equivalent squash

1 tablespoon green dried seasoning

1/2 tablespoon black pepper

1 orange rolled before cut in half

1/2 teaspoon salt

In a pan, place steaks. Top with onion. Squeeze orange over onion. Make sure to include orange pulp by rubbing the two halves of the orange together while squeezing. Top with pepper and dried seasoning. Arrange sliced cucumber over onion and top with squash. Sprinkle top of squash only with salt. Let sit for three hours. Place steaks in single aluminum foil carriages and place on barbeque grill for 30 minutes or until done. Bangin' mommy!

 

 The Cowboys "Chicken and Broccoli Caserole"

  • 4 chicken breasts, cooked and diced
  •  2 lbs. fresh broccoli
  • 20ou. Lightly steamed spiral noodles
  • 12 ou. cream of mushroom soup
  • 12 ou. cream of celery soup
  • 12 ou. cream of chicken soup
  • 1 cup mayonnaise
  • 2 tsp. Lemon juice
  • 11/2 cups shredded mixed cheese
  • 2 cups dry bread crumbs
  • 2 carrots chopped
  • ½ medium bell pepper
  • ½ medium onion
  • 2 stalks celery chopped
  • 3 Tbsp melted butter
  • 1/8 tsp Thyme
  • 1/8 tsp Sage
  • Salt and pepper


Rinse broccoli and place in 9x13 baking dish. Place chicken over top. In a bowl, combine soups, mayonnaise and lemon juice, vegetables and seasonings. Toss in noodles. Pour on top of chicken. Sprinkle with shredded cheese. Mix dry bread crumbs with melted butter and sprinkle on top of cheese. Bake at 365 for 60 minutes. This same recipe can be used with a small Beef or Pork Roast.

 

The Cowboys "Pennsylvania Chile Pot "The Kitchen Sink".

2 1/2 lbs ground beef            1 lb. beef roast

1 lb. pork shoulder               2 tablespoon extra-virgin olive oil

2  cups onion, diced              5 garlic cloves, diced

3 jalapenos, diced                1 ½ cup fresh bell pepper, diced 

2  16 ou. Can’s stewed tomatoes   2  16 ou. Can’s tomato sauce

2  8 ou. can tomato paste       1 teaspoon salt and pepper (to taste)

1 teaspoon thyme               1 teaspoon oregano

2 teaspoons Paprika             5 Scallions chopped

1 lb. Italian sausage             3 tablespoons red chile powder

1 ounce hot sauce               2 tablespoons Tobasco sauce

1lb. (1bag) pinto beans, cooked and drained  

1lb. (1bag) kidney beans, cooked and drained

 Sauté onions, garlic, peppers and jalapeno and seasonings.

 Add Tomatoes, Tomato paste and Tomato Sauce.

 Dark brown ground beef, roast, sausage and pork in a large skillet and

 add to sauce.

 Add Pinto, Kidney beans to the Sautéed ingredients and stir.

 Add water as needed. Simmer for about an hour.

Top, Chile with Cheddar Cheese and Sour Cream.

 

 

 


  • The Cowboys "Black Thai Chicken Breast"

 

Thai Fried chicken breast

8 Chicken breasts

1 lemon

1 lime

1 sprig Thyme

1 sprig Sage

 Basil (about 4 leaves)

1/2 teaspoon salt

1/2 tablespoon pepper

1 jalepeno pepper

1 tablespoon lemon pepper

1/3 cup cooking oil.

Cut jalepeno and seed. Slice lemon and lime and squeeze out juices. Put lemon and lime rinds and remainder of jalepeno and all other ingrediants into a large food storage bag  or covered bowl and marinate over night. Lightly coat Wok with 2 tablespoons of the cooking oil and sear chicken breast brown on both sides. Add remainder of marinate sauce and cooking oil and cook on medium heat for ten minutes or until free from all fat.

Serve over rice or prepare plate with 1 whole chicken breast in between two rice cakes and place in front of plate, my Bell PepperNThai salad.

 

  The Cowboys "Mommas Casadore"

  "The Bean Dip with a Twist"

 8 ounces minced black olives

12 ounces refried beans (cooked)

1/2 stick butter

2 jalepenos (minced)

1/2 tablespoon Lawry's seasoning

2 cups shredded chicken breast

 1 teaspoon Lemon pepper

dash of salt

1 tablespoon lemon juice

2 tablespoons hot sauce

1/2 teaspoon black pepper

1 cup salsa (hot or mild to taste)

Melt butter and blend with refried beans.  Add additional ingrediants, stir until well mixed.

Serve with Santitas chips. (White bag only).

 

The Cowboy's "Pineapple Roast"

3 tablespoons Ginger (minced)

11/2 cup pineapple (minced)

1/2 teaspoon salt

1 teaspoon ground Pepper

1/2 white onion

 1 cup chicken broth

1 small lemon (squeezed)

1/2 red onion

1 large pot roast

5 green onions

1/2 cup molasses

4 sprigs Thyme

4 sprigs sage

4 basil leaves

Combine all ingrediants. Stir and toss together. Pour over roast. Bake at 375 for 1 hour. Serve with rice cakes, baked potatoes or simply cut potatoe wedges and cook with roast.

The Cowboys "Shrimp and Crab Salad"

1 whole Alaskan King Crab boiled cleaned and split into halves

1lb. Cooked shelled large Shrimp

1 cup small cooked shrimp

2 cups lettuce

1 cup uncooked Spinach leaves

1/4 cup shredded carrots

2 tablespoons minced white onion

2 tablespoons minced red or purple onion

1 cup baby bean sprouts

1 cup chopped purple cabbage

1cup Mushroom buttons (Halved)

2 pinch salt

 1 teaspoon pepper

1 tablespoon lemon juice

1 tablespoon Slap Yo Momma

Combine salt, pepper, small and large shrimp, mushrooms, onion and lemon juice in frying pan with three tablespoons water and 2 tablespoons butter. Toss all seasonings and vegetables in a large bowl.  Add remaining ingrediants and toss.  Let stand in refridgerator for 30 minutes covered. Serve over crab legs with choice of dressing. Serving size:2


The Cowboys "Bell PepperNThai Salad"

4 cups 1 each  red, green, yellow

and orange bell peppers.

4 tablespoons lemon juice

1 cup soy sauce

1 cup dark brown sugar

1 block Tofu

2 sprig Thyme

2 sprig Sage

1 teaspoon salt

3 cups Bok Choy

1 1/2 cups bean sprouts

2 cups chopped Chicken breast

1 cup mushrooms(chopped)

1 cup red onion

2 tablespoons cooking oil

 2 tablespoons olive oil

Place Tofu in small bowl and compress. Drain off all fluids. Add soy sauce and pack top with brown sugar, Marinate over night.

Place all vegetables in Wok . Add olive oile and cook down Bok Choy to limp but still semi crisp. Take off stove top. Add in all other ingrediants and stir often on low heat for ten minutes. Serve over rice and or Noodles. The addition of the chicken breast is optional.

The Cowboys"Apple Salmon/Chicken Marinate"

 1 cup apple juice

 2 tablespoons Dijon Mustard

1/3 cup Apple vinegar

1 tablespoon lime juice

 2 tablespoons cranberry juice

1 cup brown sugar

 1cup sugar

 1/2 teaspoon salt

Zest from medium sized lemon.

 Reserve 1/2 marinate and boil  for two minutes. Pour over finished meat.

Bag remaining marinate with Salmon or Chicken and marinate over night. (You can use other types of fish).

Meat preparation: Place cooking ring and  wood chips of choice in wok. Turn burner on medium heat. Place metal grate or smokers basket on cooking ring and put on marinated meat. Smoke to desired texture. For any fish about ten to 15 minutes.

Chicken or Turkey marinate will need to be fried or baked.

 

The Cowboys "Western Sierra Roast"

1 tablespoon pepper

1 teaspoon salt

1  white onion (chopped)

 1 red onion (chopped)

2 cups beef stock

1 large pot roast

3 basil leaves

1 cup brown sugar

1 small lemon (squeezed)

1/2 cup unbleached flower

1/2 cup green bell pepper

3 tablespoons garlic (minced)

 11/2 cups uncooked chopped carrots

5 green onions

5 cups uncooked large cut  potatoe wedges

Combine all ingrediants. Stir and toss together. Let stand for three hours.

In a cast iron skillet sear roast on both sides and including sides.. 

Pour over roast. Bake at 375 for 1 hour.

* Some of you are trying to figure out what size roast. It should be approximately 4 to 6 inches thick and fit in a large roasting pan. You may well start the searing process by holding roast on end and browning as you go in a circle; clockwise. You have to hold the roast to sear it on the sides. Try thongs or large fork.
